I definitely suffer from OCARD! Obsessive Compulsion to Alter Recipes Disorder. It seems to be my favorite recreational activity. Today we made a butter nut muffin in a minute, chia seed raspberry jam, and low carb meringue cookies in vanilla and chocolate. Tomorrow, going to try some flax crackers with sesame and chia seeds if I'm feeling better.

This respiratory virus has pretty much wiped me out to the point of complete exhaustion. The coughing, headache, sniffles, plugged head, ear ache, and dizziness are not enough so I am not getting irregular heartbeats and chest pain. This is a concern as it's only been 4 months since my heart stent was put in.

My advice to anyone here is that if anyone is sniffling around you, don't walk but RUN in the opposite direction as fast as you can!

I swear since I turned 50 my body is literally falling apart. I have plantar fasciitis in my feet that has also decided to show it's ugly self and last week completely seized up my back at a pumpkin festival. The doc said congrats, I have degenerative osteoarthritis in my feet and back and it will never leave.

On a positive note, I am still losing weight, ever so slowly, and have even impressed myself with all of my new recipes!

Making my famous guacamole burgers tomorrow with my signature extra hot and spicy roasted Jalapeños and cumin/lime sour cream! Can't wait! High fat, low carb and simply irresistible!

Guacamole:
3 Haas avocados, halved, seeded, peeled
1 Lime, juiced
1/8-teaspoon salt
1/8-teaspoon ground cumin
1/8-teaspoon ground cayenne
3 thin slices red onion, minced
½ jalapeño pepper, minced
2 Roma tomatoes, de-seeded and chopped
1 tablespoon chopped cilantro

In a large bowl, place 1 ½ avocado, lime juice, salt, cumin, and cayenne and mash with fork or potato masher. Chop the remaining 1 ½ avocado and fold it in along with the red onion, tomatoes, and jalapeño. Mix well. Allow to sit for 1 hour so the flavors marry and blend. This can be made the previous day as the lime juice prevents the avocado from browning.

Cumin-Lime Sour Cream
½ Pint sour cream
1/8-teaspoon cumin
½ lime, juiced
Mix well and allow to sit for an hour for the flavors to marry.

Roasted peppers

2 Red Bell peppers
4 jalapeño peppers

Roast on BBQ grill or broiler until blackened. As they get black, place under an inverted bowl to allow them to steam so they are easier to peel. I use a cutting board with a pyrex bowl on top. After they steam for 10-15 minutes, cut in half, remove seeds, and cut into ½ -1 inch slices.

WARNING! Whole Jalapeno's roasted with seeds are extremely hot. I love them but my husband don't. If you want milder cut in half before roasting and take out the seeds. Oh, wear gloves when deseeding and peeling, otherwise you will be very sorry and in immense pain from burning.

Make burgers and top with guacamole, sour cream, and peppers. Sorry, no sesame buns on low carb. Ahhhhh.. we can only dream.
