Heat oven 175c. In a cast iron pan sautée 1onion ( chopped), 2 red peppers, 1 green pepper (if you like)2 diced, paprika,cumin 1tablespoon) chili pepper 1/2 tsp, cayenne1/4 tsp, salt slow cook on stove like ratatouille... keep adding water when it looks like ratatouille make sure vegetables are covered with liquid and it’s still on stove... add eggs (as many as you want,I use 6 for the family), remove from stove and put in oven for 15 minutes. Take out burrata or any other cheese , fresh chilies and chopped coriander and drizzle with olive oil let cool for 10min. If you choose mozzarella add it at the same time as eggs and take out only once the cheese is nice and golden.
