So Mrs. Baghodoughnuts was craving Southwest Fries from the local pizzaria. These are a low carb variant using Jicama. It's junk food that didn't take us over in carbs. For the uninitiated Mega / Southwest fries in the Southeast PA region are a thing. Its a stack of: Fries, Cheese Wiz, Mozzarella cheese - in the pizza oven until its getting brown, then topped with ranch dressing.

I was talking to my DH how different people eat their fries. So how is jicama as fries? I think I used to bake them at one point but I forgot about it

jicama was a bit soft as fries. you'd need to find a way to dry them a little bit.

Soft, yeah that rings a bell. Maybe I will try again when I get the deep fryer out

Looked like most recipes said to boil them before frying or baking them. Don't think I have ever tried that.
