looks AMAZING I'm definitely going to try my hand at these again. any tips on making the rice paper wraps easier to deal with?

Dizzy - dip them in warm water for like 10-15 seconds, then my little cheat is to sit the wet rice paper on a flexible cutting board to fill it. once the fillings are inside, that makes it a lot easier to grab the edges since they are so sticky. Also don't overfill them, that used to be my mistake and they wouldn't close.
