Oh well shake it off and get back on track, it happens to a lot of us on here, life is to be enjoyed I say, so what if you indulge a little on certain special days.. lol  

NM, is Lemon Meringue Pie a Canadian "thing" ?  

I don't know. Anyone else know Lemon meringue pie? It's hard to explain. Delicious. 

Lemon Meringue was my Mom's specialty! I can't bring myself to make it from her recipe. But as I remember, it is delicious!! 

Thanks, guys. Our recipe is set while simultaneously trying to suck your lips down your throat. 

Pie crust, lemon curd, stiff meringue on top. In other words, mmmmm good. 

My aunt made her own lemon filling from scratch using cornstarch lemon juice etc and it was delicious Meringue was always a treat on top 😋So yes grew up in Md and am familiar with this tasty treat ! 

I love lemon meringue, but haven't tried to make a low carb version yet. Plus, my refrigerator quit on its one year anniversary (fortunately still under warranty!) so I had to eat up or throw food out. The freezer still works, so I froze everything I could, and moved anything that fit into the wine cooler. Repair appt is not until Tuesday . . . 

I found a sugar-free key lime pie recipe in Dr Atkins's original (1972) book - I'll just change it to lemon!
