Adventure of the day: I tried Swerve today. Not so sure how I feel about it. I put a little in my coffee, measuring it just like I normally do my Splenda, and it tasted okay but left a sort of weird, sweet aftertaste. It wasn't bitter or anything, like some artificial sweeteners can be, but it was like a cool sensation (cool as in cold, not as in a little awesome) with every breath and anything I ate or drank for the next half hour had a sweet taste. That was okay (but strange) for the water I drink, but it really made my sausage and eggs a little "off".

I'm pretty new to this serious dieting game and have done very little experimenting with some of the products that are on the market today. I recently spent loads of money on ingredients to help me on my path and now I just need to figure out which ones fit in my lifestyle. For now, I have almond flour, coconut flour, Swerve, Stevia, Swerve Confectioners, Coconut oil, raw nuts, chia seeds, and a bunch of other things to play with. It does seem that no matter what, when I find a recipe I want to try, I'm missing some key ingredient that makes it low carb or healthy or whatever. This is hard!

I'm not doing the Paleo or Keto diets, but I do find many of the recipes for these diets suit my goals for myself so I'm feeling my way through a huge maze of things that have become popular since the last time I seriously focused on my diet (over 20 years ago).

Also, I've been wearing this heavy cloak of fat for most of my adult life. I spent years convincing myself that I had nothing to be ashamed of and that I should love myself the way I am, blah, blah, blah. Horsehockey. I'm fat and I don't need to be so I'm finally taking it seriously and dealing with it. And it's going to take a LONG time to undo 20+ years of really bad, poorly justified excuses for not eating as I should.

Good luck on your adventure - My wife and I have looked at a lot of the alternatives for baking and sweeteners - it is a vast sea of options. I am also not Keto and agree that a lot of those recipes work for me. we just had to play with the ingredients to get things to make sense in both taste and nutrition. Some of the alternatives weren't worth all the cost and monkey dance so I either just ate less of the original or it just came off the list. I am still really new to all of this so I am learning everyday. there are a few recipes in my cook book if you are interested.
