Today has been a good day. I scratched an itch, by making Sapporo Ichiban Noodles. I tracked every calorie of it, and I know its not good for me, but I have not eaten this stuff in nearly 30 years! I think I lived on it when I was in university. 10 packs for a pound! Seriously cheap and good! I also admit to giving it to my kids occasionally.. ok, whenever they wanted it... and they are all thriving young adults now! So.. while I was out, filling my grocery bag with vegetables, I came across the noodles, and I bought them! I did add some veggies.. but it still was soooo good!! I am making a huge batch of Cauliflower Fried Rice for dinner.... this will make up for my unhealthy lunch! This serves 8 people and only has 2 cups of rice in it.. the rest is veggies.... and its really delicious!
