I use San Remo pulse pasta made of chickpeas, lentils, peas and borlotti beans. It is pricy though. Not sure where you are based, I’m in South Africa & it is R55 for a 250g box at Dis-Chem 😭😭. I like how it tastes as well. You can try mushroom noodles but I did not like how they taste.

I also like Dischem's shirataki noodles. The rice pearls are the best for me. It is under R40 a packet, but I normally make the whole packet and a massive amount of seafood/chicken/mince with it and then it makes 4 portions for me.

I’m gonna be honest, the shirataki noodles have this chewy texture that just does not go with food as well as real pasta does. It’s like one of those diet foods that you force yourself to stomach 😂 when I use them it’s because i have no calories left and I want to bulk up my food but I try to stay away from it 🥲 not to my liking.
I would recommend Woolworths low fat noodles. They’re baked, not fried.

you can get cauliflower noodles at checkers about R38 a pack i think, they are the closest to normal noodles i have found

Cauliflower noodles from checkers and carrot noodles from pick and pay. Both good and affordable! Cauliflower closer to regular noodles though. 😁

I use zucchini zoodles(make my own bought a spiralizer), the art of making them taste good is boil them in well salted water until they just tender and drain them well and let them dry out a bit before you use them for whatever dish you are making.
