Hi Laura-JaneFuller....I don't have a set recipe for my curries, usually it's chicken, frozen veg, canned tomatoes, sweet potato and whatever else is laying around with half my spice rack :) :) So this time round I used the seitan I made last weekend (I used the washed flour method), I added diced brinjal cause I like the meaty texture/ feel? it gives and some cooked red lentils for more protein and fiber. And then followed with the usual canned tomato and this time I used normal potato.
