Culinary disasters found me yesterday. I tried 2 new recipes from the Wheat Belly book that looked fantastic. Well, the better one is edible but nothing at all special. Made me mad because it required 2 cups of grated carrots, which I dutifully peeled and grated myself.

The other recipe I screwed up by accidentally doubling the amount of an ingredient, which made the batter too wet....so I added more almond flour. It never did set up properly even with extra baking time plus there was a funny taste to it. Yuck. Then I finally realized why my batter had been too wet! Threw the entire mess in the trash.

Fortunately, the chocolate chip bars made with s/f chocolate chips came out perfectly.

I've been battling a mild cold for the last few days, so, of course, my body is NOT responding to any weight-loss efforts and is doing its best to go in the opposite direction. Although I tried to resist, I had to finally take some cold meds last night to relieve the sinus pressure that was keeping me from sleeping. I've got a constant mantra going that this too shall pass...nothing to worry about.....just fluid retention....etc., etc.

It's a very cold day today....still barely above freezing, but bright and sunny. No exercise walking for me today, but I'll get some mileage in at the thrift store this afternoon.

Which recipes did you try? I have that book...LOL! I haven't tried but maybe one or two so far. I have all his cookbooks and don't have a lot of the ingredients. Sorry your dishes didn't turn out too well. Sometimes these new flours taste better the next day. We have to realize it won't be like the REAL flour ... just another way to prepare the same dish.

Sorry to hear you are fighting off a cold, not to worry too much about that dratted scale, just stay true to your WOE plan, & don't forget the water! I have tried a couple wheat belly recipes myself and wasn't totally impressed with them. M2B is "toadally" right, (toadally being my favorite word of the day & every time I say/type it...I see her cartoon & I giggle), I have had recipes that tasted completely different the next day, or refrigerated vs room temp. Plus your cold may be affecting your tastebuds...Toadally!

This is exactly why I don't bake! I can throw stuff into a frying pan and it will come out perfect every time. But if something needs to be baked - I lose control as soon as I shut the oven door. Feel better soon.

Everything I make with almond flour is better the next day...toadally better. :)

Oh my, that's a lot of carrots to grate yourself? You're good to do that. I'll have to check out that book on Amazon. I really don't need grain at all and it gets me into trouble, so I probably won't buy it, but I want to check it out. Hope you feel better, Sandy and hope you had a GREAT time at the thrift shop. By the way, the recipes on the Bob's Red Mill site are pretty good. My favourite gluten free flour is garbanzo bean flour and there are so many recipes online.

I do have that flour. As a matter of fact, The Wheat Belly book dude uses that flour as well in his recipes. You should check it out Heather. It's not vegetarian, just wheat free.

Thanks folks. Thought I was on the mend but then I think a different bug hit me hard. Ah well....at least it's not that H1N1 virus that has actually killed some folks around here.
