Journal entry between stitching my work trousers.gggrrr!
Well, today has been good diet wise and I feel very focussed.Had a lovely dinner of chicken fillet,a pocket cut in and a blob of light garlic and herb philly inserted and then 2 rashes of bacon wrapped around the filled fillet-obviously fat removed.Haven't had that for ages.Love it.Must be one of my faves actually.Maybe I should pop that in my recipe section on here.
Did not go to the gym today.I did however spend time mowing both lawns and trimming the bushes out front.
I may have a go on EA sports active before bed tonight on the step aerobic programme via my Wii.We shall see.

It's like a home made chicken kiev.Very nice.One I picked up from Slimming World friend along the way.Done with veg tonight but sometimes do it with home made chips (par boil potatoes cut into chip shapes.I like chunky.Then pop on oven sheet/tray which has been sprayed with 1 cal spray-Frylight and then spray the top of the chips also and pop in oven) takes a while and has to be high heat but I've got so used to home made now, the time it takes I've just got used to and prefer them.

Yum :) When I want chips, I like them crispy and thin :) I usually mandolin them and place them on parchment paper. Then I pop the parchment paper in the microwave and microwave for 3 minutes. Flip them over and microwave until they start browning a bit. Makes yummy crispy chips with no oil. They take a bit to make a whole potato...so you really need to want to snack to have it. They never stay around long as my husband and our dog usually snags quite a bit of them. I made BBQ Beef Uglies (ground beef, onions, bell pepper in BBQ sauce that is placed in biscuit dough and baked in a muffin tin) for dinner and that rated about 370 calories. That and a salad is my dinner tonight :)

i love bell peppers stuffed and that sounds delicious.will have to try that i think.

Both those dinners sound lovely - you'll both need to post the recipes on here, my bellies rumbling just thinking about them!!

:) Mine is pretty simple: Makes 12 Uglies. Biscuit dough: 3 cups bisquick mix with 3 1/4 (roughly) buttermilk (or skim - less calories). Combine until you get a soft dough. Divide dough into 12 pieces and roll into a circle. Press dough into 12 greased muffin cups (or cupcake pan) like you would for a pie making sure to have high edges. You can fill it with anything you like. I used 1 lbs ground beef, 1 medium onion chopped, 1 bell pepper, chopped, 1/2 teaspoon garlic powder, 1 1/2 cups BBQ sauce (your favorite). Saute onions, bell pepper and ground beef until onions are soft and beef is browned. Drain ALL grease. Add garlic and BBQ sauce. Fill each biscuit lined muffin cup with a little over 1/4 cup of filling. Top with 1 tablespoon of shredded cheddar cheese (on each). Bake at 400 F until biscuits are golden brown (about 15-18 minutes). Enjoy one with a nice salad. That was my dinner yesterday and with a small salad the calories for my meal was 400 calories. It is filling and I didn't get hungry until about 4 hours later.
