Vegetarian shakshuka! I’ve been getting good at making and even enjoying low cal, vegetable dinners and I’m noticing the difference in my body!

that does look really good! I am teaching myself to like zucchini, that is zucchini not covered in cheese, lol. I like quick and light dinners that are good for me. If i eat too much, or too much bad stuff i cannot fall asleep.

It would be perfect with a few shreds of chicken! It is so hard for me to feel satiated with just vegetables unless I eat some cauliflower or brocoli!

Hey SumnerMT! My recipe was for one!
1 small potatoe cut up into cubes, parboiled
1/2 zucchini, diced
1/2 tinned tomato from TJ’s
Lots of spices: cumin, oregano, turmeric, smoked paprika and whatever I had laying about
Salt and pepper to taste.
1 tablespoon olive oil - I usually skip oil where I can but could afford to have some here as I was having so few calories to begin with!

I began with par boiling the potatoes while I sautéed the zucchini. Once the potatoes were parboiled (10 mins) I added them to the pan with the zucchini. Then I mixed in the tomatoes which added some juice and flavor. I added all my spices and cooked it on medium low for a minute. I also added splashed of lemon and lime to taste.
Then after it started to taste yummy (around 5-7 minutes) I made some space in the middle of the pan and cracked an egg. I waited till it crisped up and the whites went from clear to opaque. I also added lots of pepper to the egg as it cooked.
My one tip is spices. They add so much flavor it feels just as good as meat sometimes- and I’m a carnivore at heart.
